Is it possible to limit the "tags" field to a predefined list of tags? I don't want users to be able to put anything within the "Tags" section. Thank you!
The WordPress core functionality gives the option to the users to place as many tags as they like on their posts/listings. The thing that you want to do is only possible through custom coding, you would be required to hire someone to do that for you.
